Laura Coffee’s Delicious Fruit Salad

This recipe came into being as the result of a conversation about healthy lunch options.  It’s a satisfyingly dessert-y snack with no added sugar.  It’s also a great summer food, and a refreshing option for potlucks and dinner parties.  I hope you like it!

2 apples

2 plums

2 bananas

1/2 cup blueberries

1/3 cup shredded coconut (unsweetened if you can find it)

2/3 cup almonds or pecan halves

1 tsp vanilla

1 Tbsp balsamic vinegar

Remove pits and seeds and cut fruit into bite-sized pieces.  (Try replacing the plums with another stone fruit, peaches are great.  Or substitute your favorite berry for the blueberries.)  Toss with coconut, berries, and nuts in a large bowl until coconut is distributed evenly.  Add vanilla and vinegar and toss until coated.  Let rest 10-15 minutes so flavors can blend.  (You can even make this the night before.)  Serve.

This batch was made with peaches because I had them handy!
