Avocado & Black Bean Burger

Earlier this month I came across this post at valeriepassonno and started craving homemade veggie burgers.  Today I could stand it no longer and decided to put my own spin on her recipe.  This is what I came up with:

Burger Mix

  • 1 cup cooked short grain brown rice
  • 1 15oz can black beans (rinsed and drained)
  • 1/2 cup plain yogurt (Greek or non-dairy)
  • 2 medium carrots (cut into chunks)
  • 1/3 cup yellow onion
  • 2 cloves garlic

Avocado Spread

  • 1 ripe avocado
  • 1 Tbsp lime juice
  • sea salt (optional)

Additional Fixings

Preheat the oven to 450°.  Toss your beans, carrots, garlic and onion into a food processor and pulse until the carrots are in small pieces and everything is mixed together well.  Scrape everything into a bowl and add yogurt.  Stir until completely combined.  Grease a cookie sheet, spraying only the areas which will have burgers on them.  Scoop burger mix into a 2/3 cup measuring cup and smooth off excess.  Carefully flip the mix out onto greased portions of the cookie sheet.  Smooth into 1/2 inch thick patties.  (These will be about 6 inches across, use less mix if your buns are smaller.)  Place cookie sheet into the oven and set a timer for 8 minutes.  (I also put in a separate sheet of French fries at the same time.)  While the burgers are cooking peel your avocado and mash it well with lime juice (and salt if you like) until you have a smooth spread.  When the timer goes off carefully flip your burgers.  Mine were very soft so I sort of flipped the middle and gently squished everything back together.  Return patties to the oven for 7 more minutes.  While they are cooking place cheddar or veganaise on the bottom half of your buns and spread avocado on the tops.  When the 7 minutes have elapsed (remove fries first if you were making them) turn the oven up to broil and let cook for 3-5 minutes more while you get yourself a drink and dig out the hot sauce.  Take your burgers out of the oven and very carefully remove them from the pan (use the widest spatula you have) and place directly onto the bottom of the bun.  If you are using cheese this will melt it nicely.  Add some hot sauce and put the top on your burger.  Enjoy.
